Many years ago my wife and I spent a summer n SouthEastern Colorado. The local restraunt served an entree called a “Smothered Avocado Stuffed Sopapilla”. We ate it often - real often. We have never seen it since. We will be in New Mexico in late September for our 30th Anniv and are hoping to find this dish. It is a classic sopapilla (not sweetened) stuffed with guacamole and smothered in a red chile sauce. I can almost taste it….

jellymouse asked: We’ll arrive in Santa Fe on a Sunday evening in May around 6 p.m., and we would like to have dinner there that night. Keeping in mind that it’s a Sunday evening, what is a restaurant that serves traditional New Mexican food that you would recommend and that will still be open on a Sunday evening?
Also, the next day (Monday), we have until about 3:30 p.m. to see some sights. Considering we have such a short amount of time, what places would you recommend? We would love to see some of the traditional architecture, an art gallery or two, a marketplace or two, and whatever else you might recommend.

I’ve been to Clark’s, Nemo’s, Fins & Critters, etc., but I’m wondering if there are any hidden gems, perhaps in Santa Fe, that has some interesting and exotic specimens and decent prices.
